—Why This Chardonnay?—

Jim Clendenen 於 1982 年在 Santa Maria 成立了 Au Bon Climat, 在南加釀製 Pinot Noir and Chardonnay。他偏愛法國風, 強調加州酒除了要有飽滿的水果香以外還是要有足夠的酸度, 才能放置多年讓口感更佳。 2013 是個溫暖的年份, 大多數的 Chardonnay 都很飽滿, 順口,可惜多數都不耐放。但是Au Bon Climat 這款 Nuits Blanches au Bouge 會給你不同的驚艷, 如果以盲飲方式品嘗我相信大多數人會猜他是法國Burgundy 來的。有核桃皮香, 蘋果乾,老薑及其他礦物味。讓我想起幾年前去參觀 酒莊時, Jim Clendenen 為了讓我們嘗試他家 Chardonnay 成年的魅力, 特別開了一瓶 1990 Chardonnay , 還說 “I want to tell anyone who thinks California Chardonnay can’t age that the Au Bon Climat 1990 is still alive and beautiful!!” And he was right! 那是真的很難忘的一次經驗。

奧邦酒莊(Au Bon Climat)在1996年開始釀造「白晝之夜」(Nuits-Blanches),因為Jim Clendenen想要「炫耀」Bien Nacido葡萄園的超優葡萄品質。比起其他的夏多內(Chardonnay)葡萄酒,他們較晚摘果、分類得更細、存放在桶裡也更久。白晝之夜的風味比奧邦酒莊其他的夏多內葡萄酒更加豐富、更具橡木味。「白晝之夜」所需要的葡萄大致上有90% 來自Bien Nacido葡萄園「K」區,剩餘的10% 則來自Le Bon Climat葡萄園。

Le Bon Climat葡萄園中的少量作物因為陽光的關係成熟得很快,同時也更蓬勃;而Bien Nacido葡萄園K區的葡萄則需要比Le Bon Climat更長一個月才會成熟。Le Bon Climat種植的葡萄,是比戴維斯(Davis clones)夏多內更具成熟風味、低糖度的第戎(Dijon Clones)76和96號。另一方面,Bien Nacido葡萄園K區在1970年代早期就開始耕種,全數種植UC Davis 4號。一般來說,當葡萄愈來愈成熟時,糖度會增加而酸度會減少,若是氣候愈冷,這個過程會愈慢完成。在涼爽的聖瑪利亞谷產區,這品種的葡萄在成熟甜度時具有低pH值。低pH值的夏多內葡萄酒可以存放得更久、與橡木更合味,也能夠更好地搭配食物。

使用優質葡萄開始釀造,放置於François Frères新木桶中熟成18個月,未經過濾即裝瓶。擁有杏桃、薰衣草、焦糖的風味,加上檸檬/萊姆的明亮香氣,以及香草、丁香和蜜瓜混和的新鮮而辛辣尾韻。酒液的豐富度和質地都會在瓶中增強,實在讓人等不及10年後開瓶享用了!

「2013年釀造的白晝之夜夏多內葡萄酒喝起來相當提神、具親切感而且非常優雅。半透明的色澤讓這款酒有著輕快、無重量的感覺。檸檬香、石墨、薄荷、法式黃油的特性更增添了柔和感。新橡木還需要時間和酒體整合,放在杯中一段時間,酒體會變得具有奶油滑順的特性,不過仍然還保有細緻的特性。」

Notes of buttered apples, brioche, rising bread and white flowers all emerge from this medium-bodied, rich, textured, yet always fresh and lively effort that has tons of charm today. There’s real texture and depth, and it too will keep for a decade.+
